What does air-assisted airless actually do?

It uses hydraulic pressure to atomize the coating and a smaller amount of air to shape the fan and clean up the edges. You get more material on the part and less in the air than conventional spray, without the heavy tails an airless-only gun leaves behind.

Why is there an electrostatic kit in a manual gun collection?

Because it builds on the same AirCoat platform. It is a full system rather than a bare gun, so pricing and installation requirements will differ. If you only need the handheld gun, the GM 4700AC is the one to look at.

Can I convert an airless rig instead of buying a new gun?

Yes, you can. Upgrade kits turn an existing airless setup into air-assisted airless, which is usually the cheaper route if the pump is sound. It's worth pricing both options before deciding which route to take.

What else do I need to run one?

A pump with enough pressure for the tip you plan to use, high pressure fluid hose, an air line, and the right tip for your material.
